I will be shooting a dance recital on 1080i video, final runtime will be around 2 hours.
Does anyone know if I that video will down convert to a decent looking DVD, which is what they want their delivery on?

Yes, Nero will downconvert it to DVD anyway which is standard 480 the only problem is 2 hours is the max for a DVD and 1080i will go way past 4.7g which is the max a DVD can hold (Although it converts it to DVD it does not squash it down so uses the file size you have from the 1080i) If you used a dual layer DVD you would easily get a 1080i video onto its 8.5g disc. The only other thing you can do is select a lower quality for the DVD it works much like the old DVD recorders options with SP, LP, EP and so on but of course picture quality will suffer the longer you go

The resolution of the DVD-Video will be, by default, 720x... The video will be converted to mpeg-2 which has a lower compression ratio than mpeg-4. In the Recording Format Options for the DVD-Video, you can change the Automatic (Fit to Disc) quality option like Dave is suggesting to get as much as 5 hours of video on a standard DVD. Going down the list of options there, the quality will be affected somewhat.
Does the disc have to be playable in a DVD player or it would it be acceptable to create a disc which is only playable in a Blu-ray player? -

Ok. I was thinking that an AVCHD-DVD would be better for your situation but that can't be played in a DVD player.
